Garlic & Chive Sausages with Puy lentil
INGREDIENTS:
- 8 Derry Clarke @home garlic & chive sausages
- 2 shallots (diced)
- 1 carrot (peeled & diced)
- 1 stick celery (diced)
- 1 red pepper (diced)
- 1 clove garlic (crushed)
- 1 teaspoon tomato paste
- 2 tomatoes (peeled & chopped)
- 1 teaspoon thyme
- 100ml chicken or vegetable stock
- 100 g puy lentils
- 2 apples (peeled & diced)
METHOD:
- Brown the sausages in a frying pan or under the grill
- Slowly sweat off the shallot, carrot, celery, pepper and garlic for 5 min
- Add the tomato paste, chopped tomatoes and thyme and cook for further 5 min.
- Add the sausages, stock and lentils and simmer for 10-15 min
- Season and add the apple.
